Japan’s In-Shop Lettuce Factory

Subway Japan has opened a new shop “Subway Yasai Lab Maru Building Store,” the first of its kind, in the arunouchi Building in central Tokyo. Tech blog AsianJin points out that what makes the shop so unique is that there is a vegetable factory set inside the shop and it provides fresh lettuce for subway sandwich.



Pesticide-free lettuces are cultivated hydroponically at the “factory” placed at the centre of the store. 20 lettuces per week can be harvested, which unfortunately is only 5% of what gets sold. The price for a sandwich with fresh lettuce is also double what you would usually pay for a subway sandwich.

Subway Japan is running Subway Yasai Lab to show the care it takes over preparing food locally while the vegetable factory itself was a concept developed by Leave a Nest Co.,Ltd. The prototype of the factory can be seen in the below movie.
